Don't forget to save your fork

D and I went to Victoria Island in Vancouver a couple years ago. We had dinner one night at a restaurant where the windows were open to the live music on the street. I loved the atmosphere. I wanted to eat there the following night too. Dinner was yummy. I ordered Coconut Chicken that was served with a coconut milk gravy, rice pilaf and fresh asparagus. I enjoyed every bite. I took mental note of this meal so that when I returned home I could make it again for myself.

Often times after eating dinner, you'll hear, "Don't forget to save your fork for dessert. That's the best part." It's true. There's something about dessert. Like they saved the best for last.

One of my favorite desserts is my sister's Strawberry Trifle. It is so yummy. It has tons of fresh strawberries, layered in between angel food cake that's tossed with cream cheese, real whipped cream and powdered sugar. Now that's a dessert that's worth holding onto your fork for.

I heard something in Relief Society yesterday that really got me thinking. A midst all the challenges, trials and things going on in our lives, we're supposed to find joy. Yes, joy. Not just plugging along, or being happy when something good happens, or the usual "endure to the end", but really finding joy. Finding joy in the journey.


Am I finding joy in my journey? Am I savoring the good things, counting my blessings, and showing gratitude despite my trials? Not only am I going to endure to the end, but I'm going to do it with my fork in hand. Because I know that He's saving the best for last!

I would love a recipe with your dessert/fork visual. Your are right. Life is all about the journey. Why not enjoy the journey to the fullest?

I'm commenting here because I never check the comments from previous posts, and I just figure I'm not the only one...
Anyhow, I saw your "cousins came to visit" post and I recognize your cousin with the long, black hair. I can't remember where from, but I have seen her before...did she go to BYU-Hawaii? Can't place her and it's bugging me....
