Kentucky Favorites

So, I got you hungry with my Derby 135 post huh? Here are some of the recipes for our yummy Derby Feast.

Mint Juleps

2 c water
2 c sugar
one large bunch of fresh mint

Combine sugar and water and bring to a boil, do not stir. Add mint and allow to cool. Place in a large glass jar. Refrigerate for 24 hours. Remove mint leaves and store in refrigerator until ready to serve. Pour syrup over cup of ice, fill with ginger ale and garnish with a sprig of fresh mint.

Derby Pie

1/2 c flour
2 eggs, slightly beaten
1 c chopped pecans
1 tsp vanilla
1 c sugar
1/4 c butter, melted and cooled
1 c chocolate chips
1 pie crust

Beat eggs and slowly add sugar, butter, vanilla, and flour. Then mix in nuts and chips. Pour into unbaked pie shell. Bake 25-30 minutes at 350'. Serve warm with fresh whipped cream.

Hot Browns

12 slices white bread toasted
1/3 c butter
3 c milk or cream
2 egg yolks, beaten
1 TB butter
12/18 slices turkey
1/3 c flour
1 tsp salt
1/2 c freshly grated Parmesan cheese
12 slices bacon, cooked and drained

Place all 12 slices of toasted bread on cookie sheet. Top with 2-3 slices of turkey. Melt 1/3 c butter and blend in flour. Add milk and salt and stir constantly until thick and smooth. Blend in egg yolks, then Parmesan and 1TB butter. Pour 1/2 c sauce over each sandwich. Crisscross 2 slices bacon over each sandwich. Sprinkle additional Parmesan over all, run under broiler and serve when golden brown. You can also put tomatoes, mushrooms or asparagus over the bacon.
